There are a million and one decisions to make when you’re planning your wedding – some fun, others a bit tedious. But there’s one thing all brides will agree on. As with selecting your dream dress, picking out the perfect cake is never a chore. For brides hip to the “green wedding” movement, four of our city’s top cake artists have put their spin on a toothsome trend: cakes by season. Winter, Spring, summer or fall, follow their lead and bring the outdoors in one tier at a time.

Spring – The Sugar Syndicate
“I think green is very spring – the leaves are coming out and everything is budding,” says Cathay Rayhill, pastry chef and owner of The Sugar Syndicate. “The daisy is a particularly cheerful flower that doesn't feel fussy yet is in keeping with the fresh tone. I chose bold piping to give the cake a handcrafted feel.”
